Анотація

The study guide covers the issues of the first content module of the educational discipline "Commodity science of food products", relating to general basics of commodity science of food products, as well as consumption properties, assortment and features of their formation; requirements of current regulatory and technical documents to quality and safety; possible defects, causes of their occurrence and measures regarding warning; methods of identification and possible methods of falsification of flour products, fruits, vegetables and their processing products, starch, sugar, honey and confectionery products, flavor products. The publication is intended for the preparation of applicants of the first (bachelor's) level of higher education in the field of knowledge 07 Management and administration in the specialty 076 "Entrepreneurship and trade" of the State Tax University. The range of questions presented in the study guide makes it useful for teachers and students as well other institutions of higher education, experts, managers, marketers, representatives of production and trade organizations, specialists of customs authorities, consumers of goods.
